Ingredients
- 1 russet potato
- 6 cups chicken broth
- 4 ribs celery
- 3 carrots
- 1 cup dried green lentils
- 1 tsp italian seasoning
- 3 cloves garlic
- salt and black pepper (optional)
- 1 can (14 1/2 oz) diced tomatoes
- 1 tsp red wine vinegar
Steps
- Peel and dice the potato, slice the celery and carrots, and mince the garlic.
- Add the potato, celery, carrots, lentils, garlic, Italian seasoning, tomatoes, and chicken broth to a slow cooker.
- Cover and cook on high for 4 hours, or until the lentils and vegetables are tender.
- Stir in the red wine vinegar and season with salt and black pepper.
- Cover and cook for 5 more minutes.
