Ingredients

  • 1 tbsp olive oil
  • 1 lb mild italian sausage
  • 1/2 yellow onion
  • 1/4 tsp red pepper flakes
  • 5 cloves garlic
  • 2 tbsp tomato paste
  • 1 jars (24 oz) marinara sauce
  • 2 cups reduced sodium chicken broth
  • 3 tbsp each fresh minced basil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/4 tsp each salt
  • 9 uncooked lasagna noodles
  • 2 cups freshly shredded mozzarella cheese
  • 1/3 cup freshly grated parmesan cheese
  • 3/4 cup ricotta cheese
  • 2 tbsp sour cream (optional)
  • 1 pinch salt and pepper

Steps

  1. Heat the olive oil in a large oven-safe skillet over medium heat and cook the sausage and onion for 6 to 8 minutes, breaking up the meat.
  2. Stir in the garlic, red pepper flakes, tomato paste, oregano, thyme, salt, and pepper, and cook for 1 minute.
  3. Add the marinara sauce, chicken broth, and basil, then break the lasagna noodles into the skillet and press them into the liquid.
  4. Cover and simmer for 20 minutes, stirring occasionally, until the noodles are tender and the sausage reaches 160 F.
  5. Stir the ricotta with the sour cream if using, then spoon it over the skillet.
  6. Top with mozzarella and parmesan, cover, and cook for 3 to 5 minutes until the cheese melts.
