Ingredients
- 8 oz lo mein noodles
- 2 tbsp extra virgin oil
- 1 carrot
- 1 lb medium sized raw shrimp
- 1 tbsp minced garlic
- 1/3 cup low sodium soy sauce
- 1/4 cup teriyaki sauce
- 1 cup green onion plus more for garnish (optional)
- 1 tsp crushed red pepper flakes (optional)
Steps
- Boil the lo mein noodles according to the package directions, then drain them.
- Slice the carrot into thin strips and chop the green onion.
- Heat oil in a large skillet over medium-high heat and cook the carrot for 3 minutes.
- Add garlic and shrimp, then cook for 4 minutes until the shrimp reach 145 F.
- Stir in soy sauce, teriyaki sauce, green onion, and red pepper flakes for 2 minutes.
- Toss in the noodles and cook for 2 minutes until coated and hot.
