Ingredients
- 1 lb gnocchi
- 2 zucchini
- 2 cups grape tomatoes
- 3 tbsp olive oil
- 4 tsp minced garlic
- 1 1/2 tsp italian seasoning
- salt
- 1/2 cup finely shredded parmesan cheese
- 2 tbsp butter
- 2 tbsp minced fresh parsley
- 2 tbsp minced fresh basil
Steps
- Heat the oven to 425 F and line a large sheet pan with oil.
- Toss the gnocchi, sliced zucchini, tomatoes, garlic, Italian seasoning, salt, pepper, and olive oil on the pan.
- Roast for 20 to 25 minutes, stirring halfway, until the vegetables soften and the gnocchi browns.
- Melt the butter over the hot mixture, then sprinkle with parmesan, parsley, and basil.
