Ingredients

396 g pack firm tofu
2 tbsp cornflour
1 tsp sichuan or black peppercorns
2 tbsp sunflower or vegetable oil
2 red peppers sliced
1/4 head broccoli
100 g beansprouts
2 tsp low-salt soy sauce
sesame oil for drizzling (optional)
1 handful coriander leaves picked

Steps

Drain the tofu, pat it dry, and cut it into bite-size cubes.
Toss the tofu with the cornflour and crushed peppercorns.
Heat the vegetable oil in a large skillet over medium-high heat and cook the tofu for 8 to 10 minutes until crisp.
Add the peppers and broccoli, then stir-fry for 7 minutes until nearly tender.
Add the bean sprouts and soy sauce, then cook for 3 minutes.
Drizzle with sesame oil and scatter the coriander leaves over the tofu.
