Ingredients
- 1 1/2 lb chicken breasts
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp garlic powder
- 16 oz salsa verde
- 1 1/2 cups freshly grated monterey jack cheese
- 1/4 cup freshly chopped cilantro (optional)
Steps
- Heat the oven to 400 F and season the chicken breasts with salt, pepper, and garlic powder.
- Place the chicken in a lightly oiled ovenproof skillet and cook over medium heat for 5 minutes per side.
- Pour the salsa verde over the chicken and simmer for 8 minutes.
- Sprinkle the Monterey Jack cheese over the chicken and bake for 10 minutes.
- Check that the thickest chicken pieces reach 165 F, then top with cilantro.
