Ingredients
- 15 large eggs
- 1 and 1/2 cups sugar
- 1 and 3/4 cups unbleached all-purpose flour
- 3 tbsp unsweetened cocoa powder
- 21 oz country cherry pie filling/ topping
- 1 3/4 cups cold water
- 1 tbsp sugar
- 1 can cooked sweetened condensed milk
- 3 cups cold heavy whipping cream
- chocolate shavings and cordial cherries for decor (optional)
Steps
- Heat the oven to 350 F, grease three 9-inch round pans with oil, and line their bottoms.
- Beat the eggs and 1 1/2 cups sugar until thick, then fold in the flour and cocoa.
- Divide the batter among the pans and bake for 22 to 25 minutes, until the centers are firm.
- Boil the water and 1 tablespoon sugar for 5 minutes, then cool the syrup while the cakes cool completely.
- Whip the cold cream until thick, then fold in the cooked condensed milk.
- Brush the cake layers with syrup, spread cherry filling and cream between them, frost the top, decorate if desired, and chill for 30 minutes.
