Ingredients
- 1 head green cabbage
- 1 tbsp extra-virgin olive oil
- 2 tsp sea salt
- 1 whole chicken
- 2 tbsp taco seasoning
- cilantro leaves (optional)
- lime wedges (optional)
Steps
- Heat the oven to 425 F and cut the cabbage into thick wedges.
- Rub the cabbage with olive oil and half the salt, then arrange it in a large roasting pan.
- Rub the whole chicken with the remaining salt and taco seasoning, then place it breast-side up over the cabbage.
- Roast for 60 minutes, until the thickest chicken part reaches 165 F and the cabbage is tender.
- Rest the chicken for 10 minutes, then scatter cilantro over the cabbage and serve with lime wedges.
