Ingredients
- 8 oz chopped fresh broccoli
- olive oil (optional)
- salt and pepper (optional)
- 1 cup dry quinoa
- 1 1/2 cups water
- 2 oz kale
- 1/2 cup dried cranberries
- 1/3 cup feta
- 1 1/2 lemons
- 3 tbsp avocado oil
- 1 tsp white wine vinegar
- 1 clove garlic
- 1/4 tsp sea salt (optional)
- 1/4 tsp black pepper
Steps
- Heat the oven to 425 F and roast the broccoli with oil, salt, and pepper on a baking sheet for 18 to 20 minutes.
- Rinse the quinoa, then simmer it with 1 1/2 cups water in a saucepan for 15 minutes, until tender.
- Whisk the lemon juice, avocado oil, vinegar, garlic, salt, and pepper in a small bowl.
- Toss the warm quinoa, broccoli, kale, almonds, cranberries, and feta in a large bowl.
- Pour the dressing over the salad and toss until evenly coated.
