Ingredients
- 1 cup fava beans
- 1 tbsp lemon juice
- 1 cucumber
- 1/4 cup red wine vinegar
- 1 pinch salt
- 1/8 lb prosciutto thinly sliced
- 4 small pita breads
- 2 tbsp extra virgin olive oil
- 1/2 cup ricotta
- fresh parsley (optional)
Steps
- Boil the fava beans in water for 5 minutes, then drain and cool them.
- Chop the cucumber and toss it with red wine vinegar and salt.
- Stir the fava beans into the ricotta with the lemon juice and olive oil.
- Heat a grill to medium-high, about 400 F.
- Grill the pitas for 2 minutes per side, then cut them into wedges.
- Top the pita wedges with the ricotta mixture, cucumber, and prosciutto.
