Ingredients
- 2 cups rhubarb
- 1 3/4 cups all-purpose flour
- 2/3 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 1/2 cup milk
- 1/2 cup vanilla greek yogurt
- 1/4 cup butter
- 2 tsp vanilla extract
Steps
- Heat the oven to 375 F and grease 12 muffin cups with cooking oil.
- Whisk the flour, sugar, baking powder, and salt in a large bowl.
- Melt the butter, then whisk it with the egg, milk, yogurt, and vanilla.
- Stir the wet mixture into the dry mixture until just combined, then fold in the rhubarb.
- Divide the batter among the muffin cups and bake for 18 to 22 minutes, until firm and a toothpick comes out clean.
- Cool the muffins in the pan for 5 minutes before removing them.
