- 1/3 cup granulated sugar
- 1 tbsp cornstarch
- 3 cups frozen raspberries
- 2 tsp fresh lemon juice
- 1/2 tbsp butter
- 1/2 cup graham cracker crumbs
- 1 tbsp granulated sugar
- 2 tbsp melted butter
- 16 oz cream cheese
- 1/4 cup sour cream
- 1 tsp vanilla extract
- 2 cups powdered sugar
- 1/2 cup heavy whipping cream
- whipped cream (optional)
Steps
- Combine the raspberries, 1/3 cup sugar, cornstarch, and lemon juice in a medium saucepan.
- Cook the raspberry mixture over medium heat for 8 minutes, stirring, then stir in 1/2 tablespoon butter and cool for 5 minutes.
- Toast the graham cracker crumbs, 1 tablespoon sugar, and melted butter in a skillet over medium heat for 3 minutes.
- Beat the cream cheese, sour cream, vanilla, and powdered sugar until smooth.
- Whip the heavy cream until thick, then fold it into the cream cheese mixture.
- Layer crumbs, cream cheese mixture, and raspberry sauce in 22 small shooter glasses, then top with whipped cream if desired.
