Ingredients
- 1 white cake mix
- 2 eggs
- 1 cup sour cream
- 1/2 cup milk
- 1/3 cup vegetable oil
- 3 sticks butter
- 6 cups powdered sugar
- 5 tbsp milk
- 1/2 tsp vanilla extract
- 1/2 tsp coconut extract
- 1 dash salt
Steps
- Heat the oven to 350 F and line 18 muffin cups with paper liners.
- Beat the cake mix, eggs, sour cream, milk, and oil until the batter is smooth.
- Divide the batter among the liners and bake for 18 to 22 minutes, until the centers spring back.
- Cool the cupcakes completely on a rack.
- Beat the butter, powdered sugar, milk, vanilla, coconut extract, and salt until smooth and fluffy.
- Pipe or spread the frosting over the cooled cupcakes.
