- 1 3/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 3/4 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1 cup packed light brown sugar
- 1 1/4 cups canned pumpkin puree
- 1/2 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 6 oz cream cheese
- 6 tbsp unsalted butter
- 1 3/4 cups powdered sugar
- 1 tsp vanilla extract
- chopped pecans (optional)
Steps
- Heat the oven to 350 F and line two baking sheets.
- Whisk the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves in a bowl.
- Stir the brown sugar, pumpkin puree, oil, egg, and vanilla into the dry mixture.
- Drop the batter into 32 small rounds on the baking sheets and bake for 12 to 15 minutes.
- Cool the cakes completely for about 60 minutes.
- Beat the cream cheese, butter, powdered sugar, and vanilla until smooth, then sandwich pairs of cakes with the filling.
