- 3 cups all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tbsp ground fresh cinnamon
- 1 tbsp ground ginger
- 1 tbsp ground cloves
- 2 cups brown sugar-firmly packed
- 1 cup vegetable oil
- 3 cups pumpkin puree-chilled
- 2 large eggs
- 1 tsp vanilla
- 3 cups powdered sugar
- 1/2 cup unsalted butter-at room temperature
- 8 oz cream cheese-at room temperature
- 3 tbsp maple syrup
Steps
- Heat the oven to 350 F and grease a 9-by-13-inch baking pan with cooking oil.
- Whisk the flour, salt, baking powder, baking soda, cinnamon, ginger, and cloves in a medium bowl.
- Whisk the brown sugar, oil, pumpkin, eggs, and vanilla in a large bowl, then stir in the dry mixture.
- Spread the batter in the pan and bake for 35 minutes, until the center is firm.
- Beat the powdered sugar, butter, cream cheese, and maple syrup until smooth, then cool the cake completely and spread on the frosting.
