- 3 eggs
- 1 cup white sugar
- 2/3 cup pumpkin puree
- 1 tsp lemon juice
- 3/4 cup all-purpose flour
- 2 tsp cinnamon
- 1 tsp baking powder
- 1 tsp ginger
- 1 tsp nutmeg
- 1/2 tsp salt
- powdered sugar for sprinkling (optional)
- 1 package (8 oz) cream cheese
- 1/4 cup butter
- 1 cup powdered sugar
- 1/2 tsp vanilla extract
Steps
- Heat the oven to 375 F and grease a 10-by-15-inch jelly roll pan with cooking oil.
- Beat the eggs and sugar until thick, then mix in the pumpkin and lemon juice.
- Whisk the flour, cinnamon, baking powder, ginger, nutmeg, and salt together, then fold them into the pumpkin mixture.
- Spread the batter in the pan and bake for 13 to 15 minutes until the cake is set.
- Beat the cream cheese, butter, powdered sugar, and vanilla until smooth.
- Cool the cake for 5 minutes, spread on the filling, roll it from one short side, and sprinkle with powdered sugar if using.
