- 1/2 cup pumpkin puree
- 3/4 cup non dairy milk
- 1 tbsp starch
- 1 tbsp flour
- 2 tsp flax meal (optional)
- 1/2 tsp vanilla extract
- 1 tbsp maple syrup or sugar
- 1 tsp pumpkin pie spice
- 1/8 tsp salt
- 2 small apples
- 1/2 cup water
- 3 tbsp coconut sugar
- 1/2 tsp pumpkin pie spice
Steps
- Cut the apples into thin slices, then simmer them with water, coconut sugar, and pumpkin pie spice in a small saucepan for 8 minutes.
- Whisk the pumpkin puree, non-dairy milk, starch, flour, flax meal, vanilla, maple syrup, pumpkin pie spice, and salt in a shallow dish.
- Heat a lightly oiled large skillet over medium heat.
- Dip each bread slice in the pumpkin mixture, coating both sides without soaking too long.
- Cook the slices for 3 to 4 minutes per side, adding oil as needed, until browned and heated through.
- Serve the French toast with the warm apples.
