Ingredients
- 2 whole boneless skinless chicken breasts
- as needed kosher salt and ground black pepper (optional)
- 3/4 cup all purpose flour
- 3 large eggs
- 3 cups salted pretzel snaps or minis
- 1/3 cup plain breadcrumbs
- 2 tsp each: onion powder and garlic powder
- 1 tsp each: sweet paprika and smoked paprika
- 1/2 tsp cayenne pepper
- 11 tbsp vegetable oil (optional)
Steps
- Heat the oven to 425 F and oil a large baking sheet.
- Slice the chicken breasts into six cutlets, then season them with salt and pepper.
- Crush the pretzels and mix them with breadcrumbs, onion powder, garlic powder, sweet paprika, smoked paprika, and cayenne.
- Place flour, beaten eggs, and the pretzel mixture in three shallow bowls.
- Coat each chicken cutlet in flour, egg, and pretzel crumbs, then place them on the baking sheet.
- Drizzle the chicken with oil and bake for 18 to 22 minutes, until it reaches 165 F.
