Ingredients
- 4 large russet potatoes
- 1/2 cup finely minced yellow onion
- 1 1/2 cups grated sharp white cheddar cheese
- 1 cup grated sharp orange cheddar cheese
- 1 1/2 cups sour cream
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 cup minced green onions
Steps
- Pierce the russet potatoes and microwave them on high for 10 minutes, turning halfway through.
- Cool the potatoes for 5 minutes, peel them, and shred them into a large bowl.
- Heat the oven to 375 F and grease a 2-quart baking dish with cooking oil.
- Stir the potatoes with onion, sour cream, garlic powder, salt, pepper, and both cheeses.
- Spread the mixture in the dish and bake for 20 minutes, then top with green onions and bake for 5 more minutes.
