Ingredients
- 4 leeks
- 1/2 large white onion
- 2 russet potatoes
- 1 tbsp flour
- 1 tbsp butter
- 4 cups chicken broth
- 1/2 cup 2% milk
- salt and fresh pepper (optional)
- fresh chives (optional)
Steps
- Slice the leeks, onion, and potatoes into small pieces.
- Melt the butter in a 4-quart pot over medium heat and cook the leeks and onion for 5 minutes.
- Stir in the flour and cook for 1 minute.
- Add the potatoes, broth, salt, and pepper, then simmer for 15 minutes until tender.
- Stir in the milk and simmer for 3 minutes.
- Blend the soup until smooth and top with chives.
