Ingredients

  • 8 oz 1/2 pound dry corn husks
  • 2 1/2 lb boneless pork shoulder
  • 1 white onion
  • 1 bay leaf
  • 2 tbsp kosher salt
  • 1 tsp whole black peppercorns
  • 3 sprigs fresh mexican oregano or italian oregano or 2 teaspoons dried oregano
  • 1 1/2 lb tomatillos
  • 1 small white onion
  • 2 cloves garlic
  • 1 jalapeño
  • 1 serrano pepper
  • 1 bunch cilantro
  • 1 1/2 tsp kosher salt
  • 2 1/2 cups fresh pork lard
  • 2 tbsp baking powder
  • 1 tbsp kosher salt
  • 4 lb fresh masa quebrada para tamales-- not masa preparada para tamales
  • 1 1/4 cups pork stock

Steps

  1. Soak the corn husks in hot water for 30 minutes, keeping them submerged.
  2. Put the pork, one onion, bay leaf, oregano, peppercorns, two tablespoons salt, and enough water in a large pot, then simmer covered for 2 1/2 hours.
  3. Boil the tomatillos, second onion, garlic, jalapeño, and serrano in water for 10 minutes, then blend with cilantro and 1 1/2 teaspoons salt.
  4. Shred the cooked pork and mix it with enough salsa verde to moisten it.
  5. Beat the lard, baking powder, and one tablespoon salt, then mix in the masa and pork stock until soft.
  6. Spread masa on each husk, add pork, fold the husks, and steam upright in a large steamer for 90 minutes until the masa is firm and the pork reaches 145 F.
