Ingredients
- 4 bone-in chicken pieces
- salt to season
- 3 guajillo peppers
- 1 tsp badia sazón completa or 1/2 tsp garlic powder & 1/tsp onion powder
- 1 tsp mexican oregano
- 1 tsp cumin
- 1 tsp freshly ground pepper
- 1 tsp garlic powder
- 1/4 cup lime juice
- 1/2 cup water
- 1 tbsp vegetable oil
Steps
- Remove the stems and seeds from the guajillo peppers, then simmer them in 1/2 cup water for 5 minutes.
- Blend the softened peppers with the water, lime juice, sazón or garlic and onion powders, oregano, cumin, pepper, and garlic powder.
- Heat the oil in a 12-inch skillet over medium-high heat, then brown the seasoned chicken pieces for 3 minutes per side.
- Pour in the adobo, cover the skillet, and simmer over medium-low heat for 20 minutes.
- Uncover and cook until the chicken reaches 165 F and the sauce thickens, about 5 minutes.
