Ingredients
- 1/2 cup salted butter
- 1/2 cup brown sugar
- 1 slices 398 ml can pineapple
- 16 maraschino cherries
- 4 large eggs
- 1 300 ml can sweetened condensed milk
- 3/4 cup pineapple juice
- 1 tsp vanilla
- 8 cups cubed white bread
Steps
- Heat the oven to 350°F and grease a 9-by-13-inch baking dish with some butter.
- Melt the remaining butter in a small pan, stir in the brown sugar for 2 minutes, and spread the mixture in the dish.
- Arrange the pineapple slices and cherries over the sugar mixture.
- Whisk the eggs, condensed milk, pineapple juice, and vanilla in a large bowl.
- Add the bread cubes, toss to coat, and let them soak for 5 minutes.
- Pour the bread mixture into the dish and bake for 35 minutes, until the custard is set and the eggs are firm.
- Cool the pudding for 5 minutes, then invert it onto a large plate.
