- 1 box yellow cake mix
- 1 1/2 cups heavy cream
- 3 tbsp sugar
- 2 tsp coconut extract
- 1 jar (16 oz) maraschino cherries (optional)
- 1/2 cup drained crushed pineapple
- 3 tsp rum extract
- 1/2 cup toasted coconut
Steps
- Bake the yellow cake mix with water and cooking oil in a 9-by-13-inch pan at 350 F for 25 minutes.
- Cool the cake in the pan for 10 minutes, then poke holes across its surface.
- Stir the cream of coconut, rum extract, and crushed pineapple together, then pour the mixture over the holes.
- Beat the heavy cream, sugar, and coconut extract until soft peaks form, then spread it over the cake.
