Ingredients
- 6 boneless skinless chicken breasts
- 1/4 cup butter
- 1/2 cup italian breadcrumbs
- 1/4 cup prepared basil pesto
- 1 tsp olive oil
- 8 oz sliced fresh mushrooms
- 6 slices provolone cheese
Steps
- Heat the oven to 400 F and oil a 9-by-13-inch baking dish.
- Season the chicken with salt and pepper, then coat it with the breadcrumbs.
- Brown the chicken in the oil and half the butter in a large skillet over medium-high heat for 3 minutes per side.
- Cook the mushrooms in the remaining butter for 5 minutes.
- Place the chicken in the baking dish, spread pesto over each piece, and add the mushrooms and provolone.
- Bake for 18 to 22 minutes, until the chicken reaches 165 F and the cheese melts.
