Ingredients
- 4 stalks kale
- 1/2 head green cabbage
- 2 small fresno peppers
- 1 cup peanuts
- 1/2 cup chopped cilantro
- 1/2 cup chopped green onions
- 1/2 cup roasted peanut oil
- 2 tbsp rice vinegar
- 1 clove garlic
- 2 1/2 tbsp sugar
- 1 tsp coarse kosher salt (optional)
- freshly ground black pepper
Steps
- Whisk the peanut oil, rice vinegar, sugar, minced garlic, salt, and black pepper in a small bowl.
- Slice the kale, cabbage, and Fresno peppers into thin strips and place them in a large bowl.
- Add the cilantro, green onions, and peanuts to the bowl.
- Pour in the dressing and toss for 2 minutes until the vegetables are evenly coated.
- Let the salad stand for 5 minutes before serving.
