Ingredients
- 1 1/4 cups unsalted butter
- 1 cup dark brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 1 tbsp dark molasses
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 tsp ground cinnamon
- 1/4 tsp ground cloves
- 3 cups uncooked quick-cooking oats
- 3/4 cup unsalted butter
- 3 cups powdered sugar
- 3 tbsp heavy cream
- 1 1/2 tsp vanilla extract
- 1 pinch salt (optional)
Steps
- Heat the oven to 350 F and line two baking sheets.
- Beat 1 1/4 cups butter with both sugars, then beat in the egg, 2 teaspoons vanilla, and molasses.
- Whisk the flour, baking soda, salt, cinnamon, and cloves, then stir them into the butter mixture with the oats.
- Drop 28 small spoonfuls onto the sheets and bake for 8 to 10 minutes, until the centers are set.
- Cool the cookies completely for about 10 minutes.
- Beat the remaining butter, powdered sugar, cream, remaining vanilla, and optional salt until smooth, then sandwich the cookies with the filling.
