Ingredients
- 1 cup old-fashioned rolled oats
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/8 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter
- 1 cup dark brown sugar
- 1 large egg
- 3/4 tsp vanilla extract
- 3/4 cup coarsely chopped pecans
- 3/4 cup raisins or currants
Steps
- Heat the oven to 350 F and line two baking sheets with parchment.
- Whisk the flour, oats, baking powder, baking soda, and salt in a medium bowl.
- Beat the butter and brown sugar in a large bowl until smooth, then beat in the egg and vanilla.
- Stir the dry mixture into the butter mixture, then fold in the pecans and raisins.
- Drop rounded tablespoons of dough onto the sheets and bake for 10 to 12 minutes.
- Cool the cookies on the sheets for 5 minutes, then transfer them to a rack.
