Ingredients
- 1 cup walnuts
- 1/2 cup parmesan cheese
- 1/4 cup olive oil
- 1 clove garlic
- 1 lemon
- salt and pepper to taste (optional)
- 1 tbsp butter
- 16 oz fresh sliced mushrooms
- 24 oz delallo traditional gnocchi
- 3 1/2 cups arugula (optional)
- fresh parsley (optional)
Steps
- Blend the walnuts, Parmesan, olive oil, garlic, lemon juice, salt, and pepper until a coarse pesto forms.
- Melt the butter in a large skillet over medium heat and cook the mushrooms for 8 minutes.
- Boil the gnocchi in salted water until they float, then drain.
- Add the gnocchi and pesto to the skillet, then toss over low heat for 2 minutes.
- Fold in the arugula and parsley, then add lemon zest before serving.
