- 1 1/2 cups all-purpose flour
- 1 1/2 cups cake flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter
- 1 1/4 cups granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- sliced fresh fruit (optional)
- 8 oz cream cheese
- 1/2 cup unsalted butter
- 2 tsp lemon zest
- 1 tbsp fresh lemon juice
- 1/2 tsp vanilla extract
- 1/4 tsp lemon extract
- 1 1/2 cups powdered sugar
Steps
- Whisk the all-purpose flour, cake flour, baking powder, and salt in a medium bowl.
- Beat the butter and sugar until creamy, then beat in the eggs and vanilla.
- Stir in the flour mixture, cover the dough, and chill it for 4 hours.
- Heat the oven to 350 F, scoop 24 portions onto baking sheets, and flatten them slightly.
- Bake the cookies for 10 to 12 minutes, then cool them completely for 30 minutes.
- Beat the cream cheese, butter, lemon zest, lemon juice, extracts, and powdered sugar until smooth, spread it on the cookies, and top with sliced fruit.
