Ingredients
- 1 cup graham cracker crumbs
- 5 tbsp butter diced into 1 tbsp pieces and melted
- 1 tbsp honey
- 1/3 cup heavy cream
- 2 tbsp granulated sugar
- 8 oz cream cheese
- 1 can (14 oz) sweetened condensed milk
- 2 tsp lime zest (optional)
- 1/2 cup fresh lime juice
- 3/4 cup heavy cream
- 1 1/2 tbsp granulated sugar
- 12 fresh raspberries (optional)
Steps
- Mix the graham cracker crumbs, melted butter, and honey, then press the mixture into 12 muffin cups.
- Beat the cream cheese, condensed milk, lime juice, and optional lime zest in a bowl until smooth.
- Whip the 1/3 cup heavy cream with 2 tablespoons sugar until soft peaks form, then fold it into the lime mixture.
- Spoon the filling over the crusts and freeze the muffin tin for 3 hours.
- Whip the remaining heavy cream with the remaining sugar, spoon it over the pies, and add optional raspberries before serving.
