Ingredients
- 1 tbsp mazola® corn oil
- 3/4 cups peeled & diced carrots
- 1 large tomato or 2 plum tomatoes
- 1/8 a large white onion
- 1 small garlic clove
- 4 cups water
- 1 cup pasta with a small shell shape
- 1 1/2 cup baby spinach
- salt to taste (optional)
Steps
- Chop the tomato, onion, and garlic, then cut the carrots into small pieces.
- Heat the oil in a four-quart pot over medium heat and cook the carrots for 4 minutes.
- Add the tomato, onion, garlic, water, and bouillon, then bring the mixture to a boil.
- Stir in the pasta and simmer for 8 minutes, or until the shells are tender.
- Add the spinach and cook for 2 minutes until wilted.
- Taste the soup and add salt if needed before serving.
