Ingredients
- 1/2 cup chopped onion
- 1 tsp vegan butter
- 1 tsp ginger garlic paste
- 1/2 tsp garam masala
- 2 tbsp dried fenugreek leaves
- 1 cup thin cashew cream
- 1/4 cup raw cashews
- 1/2 cup green peas
- 1/2 cup grated firm tofu
- 1/4 tsp chili flakes
- salt to taste (optional)
- sugar to taste (optional)
Steps
- Melt the vegan butter in a medium skillet over medium heat and cook the onion for 3 minutes.
- Stir in the ginger garlic paste, garam masala, fenugreek, and chili flakes and cook for 1 minute.
- Add the cashew cream, cashews, peas, and tofu and stir for 2 minutes.
- Simmer the curry over low heat for 8 minutes, stirring twice.
- Season with salt and sugar if desired, then cook for 1 more minute.
