Ingredients
- 1 cup low fat cottage cheese
- 1 cup low-fat milk
- 1 egg yolk
- 1/2 tsp ground pepper
- 2 tbsp butter
- 1/2 cup grated parmesan cheese
- 8 oz fettuccine
Steps
- Boil the fettuccine in salted water until tender, about 8 to 10 minutes, then drain.
- Blend the cottage cheese, milk, egg yolk, and pepper until smooth.
- Melt the butter in a large skillet over medium heat.
- Pour in the cottage cheese mixture and cook for 3 to 4 minutes, stirring, until steaming and thickened.
