- 1 cup sifted cake flour
- 3/4 cup no sugar sugar substitute
- 1/2 tbsp baking powder
- 1/4 tsp salt
- 3 tbsp canola oil
- 1 large egg
- 1/4 cup egg substitute
- 1/4 cup water
- 3/4 tsp pure vanilla extract
- 1/2 orange
- 1/2 cup egg white
- 1/4 tsp cream of tartar
- 1 1/2 cups no sugar fat-free whipped topping
- 1 lb fresh peach
- 1 tbsp lemon juice
Steps
- Heat the oven to 350 F and coat an 8-inch round cake pan with cooking spray.
- Mix the cake flour, sugar substitute, baking powder, and salt in a bowl.
- Whisk the oil, whole egg, egg substitute, water, vanilla, and orange juice into the dry mixture.
- Beat the egg whites with the cream of tartar until firm peaks form, then fold them into the batter.
- Pour the batter into the pan and bake for 25 to 30 minutes until set.
- Cool the cake completely, spread it with whipped topping, and cover it with peaches tossed with lemon juice.
