Ingredients

1/2 small yellow onion
2 cloves garlic
1 tsp greek seasoning
to taste kosher salt & ground black pepper (optional)
1/4 cup dry white wine
1 3/4 cup no-sodium chicken or vegetable broth
1 whole bay leaf
2 1/2 tbsp each: fresh flat-leaf parsley & dill
1/2 cup feta cheese

Steps

Melt the butter with the olive oil in a medium saucepan over medium heat.
Cook the onion and garlic for 3 minutes until softened.
Add the rice and Greek seasoning, then stir for 2 minutes until the grains are coated.
Pour in the wine and cook for 2 minutes until mostly absorbed.
Add the broth, lemon zest, lemon juice, bay leaf, salt, and pepper, then cover and simmer for 18 minutes.
Remove the bay leaf, fluff the rice, and fold in the parsley, dill, and feta.
