Ingredients
- 75 g butter
- 1 kg leek
- 1/2 tsp salt
- 300 ml creme fraiche
- 1 egg
- 3 egg yolks
- 1/4 tsp nutmeg
- 225 g plain flour
- 1/2 tsp salt
- 60 g butter
- 60 g lard
- 50 g cheddar cheese
- 2 tbsp water
Steps
- Heat the oven to 400 F and grease a 9-inch tart pan with cooking oil.
- Mix the flour, 60 g butter, lard, one-half teaspoon salt, and water into a dough, then press it into the pan.
- Melt 75 g butter in a large skillet, add the leeks and one-half teaspoon salt, and cook for 10 minutes until soft.
- Whisk the creme fraiche, egg, egg yolks, nutmeg, and pepper in a bowl.
- Spread the leeks and cheddar over the crust, pour the egg mixture on top, and bake for 25 minutes until firm.
