2 blocks extra-firm tofu
4 tbsp cornstarch
4 tbsp sesame oil

Steps

Press the tofu between towels for 15 minutes, then cut it into bite-size cubes.
Toss the tofu with cornstarch until evenly coated.
Whisk the soy sauce, rice vinegar, and sugar in a small bowl.
Heat the sesame oil in a large skillet over medium-high heat and cook the tofu for 10 minutes, turning until crisp.
Add the peppers, green onions, ginger, garlic, and chilies, then cook for 6 minutes.
Pour in the sauce and stir in the roasted peanuts, cooking for 3 minutes until glossy.
