Ingredients
- 1 3/4 lb boneless skinless chicken breasts or thighs
- salt and pepper
- 1 package (8 oz) cream cheese
- 2 tbsp milk or cream
- 1/2 tsp garlic powder
- 2 1/2 jalapeno peppers
- 1/2 cup cooked and crumbled bacon
- 1 cup shredded cheddar cheese
Steps
- Heat the oven to 375 F and lightly oil a 9-by-13-inch baking dish.
- Cut pockets into the thick sides of the chicken, then season them with salt and pepper.
- Mix the cream cheese, milk, garlic powder, jalapeños, and bacon in a bowl.
- Fill the chicken pockets with the cream cheese mixture and place the chicken in the dish.
- Top with cheddar cheese and bake for 30 minutes, until the chicken reaches 165 F.
- Rest the chicken for 5 minutes before serving.
