Ingredients
- 1 tbsp avocado oil
- 2 stalks celery
- 1 large carrot
- 1/2 large yellow onion
- 2 cloves garlic
- 1 bay leaf
- 28 oz crushed tomatoes
- 4 cups vegetable broth
- 1 cup water
- 1 tsp herbs de provence
- 1/2 tsp cumin
- 1/4 tsp smoked paprika
- salt and pepper to taste (optional)
- 1 bunch tuscan kale
Steps
- Set the Instant Pot to sauté and heat the avocado oil for 2 minutes.
- Add the celery, carrot, onion, and garlic, then sauté for 5 minutes.
- Stir in the bay leaf, tomatoes, broth, water, herbs, cumin, paprika, salt, and pepper.
- Seal the pot, cook at high pressure for 5 minutes, and release the pressure carefully after 5 minutes.
- Remove the bay leaf, stir in the chopped kale, and let the soup stand for 3 minutes.
