Ingredients

6 strips thick cut smoked bacon
1 lb pinto beans
1 large onion
4 cloves garlic
4 cups unsalted chicken stock
3/4 tsp chilli powder
1 tsp ground cumin
1 tsp dried oregano
salt to taste (optional)
2 stalks green onions
36 g medium cheddar cheese

Steps

Rinse the pinto beans and remove any damaged beans.
Set a 6-quart Instant Pot to Sauté, cook the chopped bacon for 6 minutes, and leave the fat in the pot.
Add the onion and garlic, then cook for 3 minutes.
Add the beans, chicken stock, chili powder, cumin, and oregano, then seal the pot and cook on high pressure for 45 minutes.
Let the pressure release naturally for 20 minutes, then release the remaining pressure.
Mash the beans in the pot, stir in the cheddar, and top with sliced green onions.
