Ingredients

  • 1 1/4 lb well marbled chuck steak
  • 1 large onion
  • 1 large shallot
  • 3 cloves garlic
  • 1 tbsp ginger
  • 5 1/2 dried chinese red chili (optional)
  • 2 stalks green onions
  • 1 tbsp peanut oil
  • salt & freshly ground black pepper to taste (optional)
  • 1/2 cup unsalted chicken stock
  • 2 tbsp brown sugar
  • 1 tbsp regular soy sauce
  • 1 tsp dark soy sauce
  • 3 drops sesame oil
  • 2 tbsp cornstarch
  • 2 tbsp water

Steps

  1. Cut the chuck steak into bite-size pieces and season it with salt and pepper.
  2. Set a 6-quart pressure cooker to sauté, heat the peanut oil, and brown the beef in batches for 5 minutes.
  3. Add the onion, shallot, garlic, ginger, and chilies, then sauté for 3 minutes.
  4. Pour in the chicken stock, brown sugar, soy sauces, and sesame oil, scraping up browned bits.
