Ingredients

1 head cauliflower
2 small red potatoes
4 cups unsalted chicken stock
6 cloves garlic
6 slices bacon
1 onion
1 cup heavy cream
2 bay leaves

Steps

Set the Instant Pot to sauté, cook the bacon for 6 minutes, and transfer it to a plate.
Cook the onion and garlic in the bacon fat for 3 minutes.
Add the cauliflower, potatoes, stock, bay leaves, fish sauce, salt, and pepper.
Seal the pot and pressure-cook on high for 8 minutes, then let the pressure release naturally for 10 minutes.
Remove the bay leaves, blend the soup until smooth, and stir in the cream.
Crumble the bacon over the soup and add green onions or Parmesan if desired.
