Ingredients
- 6 tbsp white whole wheat flour
- 6 tbsp all purpose flour
- 1/4 cup light brown sugar
- 3 tbsp cornstarch
- 2 tsp grated lemon zest
- 1/2 tsp baking powder
- 1/4 tsp kosher salt
- 4 tbsp unsalted butter
- 1 tbsp 0% greek yogurt
- 1/3 cup honey
- 3 large eggs
- 2 tbsp white whole wheat flour
- 1/8 tsp kosher salt
- 1 tsp grated lemon zest
- 5 tbsp fresh lemon juice
- 1 tbsp powdered sugar (optional)
Steps
- Heat the oven to 350 F and line a 9-by-13-inch pan with cooking oil.
- Mix both flours, brown sugar, cornstarch, lemon zest, baking powder, and salt, then work in the butter and yogurt.
- Press the crust into the pan and bake for 15 minutes.
- Whisk the honey, eggs, flour, salt, lemon zest, and lemon juice until smooth.
- Pour the filling over the hot crust and bake for 25 minutes, until the center is set.
- Cool the bars in the pan for 30 minutes, then dust with powdered sugar if using.
