Ingredients
- 1 1/4 cups milk + 2 tsp apple cider vinegar
- 1 1/4 cups whole grain yellow cornmeal
- 3/4 cup all purpose flour
- 1/3 cup honey
- 1 large egg
- 1 tbsp baking powder
- 1 tsp kosher salt
- 1/3 cup avocado oil or melted coconut oil
- 1/2 cup sharp cheddar cheese
- 1 cup corn kernels (optional)
Steps
- Heat the oven to 400 F and grease ten muffin cups with cooking oil.
- Stir the milk and vinegar together and let them stand for 5 minutes.
- Whisk the cornmeal, flour, baking powder, and salt in a large bowl.
- Whisk the soured milk, honey, egg, and oil together, then stir them into the dry mixture until just combined.
- Fold in the cheddar and corn, divide the batter among the muffin cups, and bake for 15 to 18 minutes until firm.
