Ingredients
- 2 tbsp butter
- 2 cups almond flour
- 1/4 cup ground flaxseed
- 1 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp fine sea salt
- 1/3 cup pure maple syrup
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup grated zucchini
Steps
- Heat the oven to 350 F and grease an 8-inch square pan with 2 tablespoons butter.
- Stir the almond flour, flaxseed, baking soda, cinnamon, nutmeg, and salt in a bowl.
- Whisk the maple syrup, eggs, and vanilla, then fold in the dry mixture and zucchini.
- Spread the batter in the pan and bake for 25 minutes, until the center is firm.
- Cool the cake in the pan for 5 minutes before adding the optional frosting.
