- 6 1/2 bone-in pork chops
- 1 cup apple juice
- 1/4 cup apple cider vinegar
- 1/4 cup honey
- 1 tbsp dijon mustard
- 2 1/2 tsp kosher salt
- 1 tsp ground cumin
- 3/4 tsp paprika
- 3/4 tsp garlic powder
- 3/4 tsp freshly ground black pepper
- 1/2 tsp onion powder
- 1/4 tsp ground cinnamon
- 1/8 tsp cayenne pepper (optional)
Steps
- Whisk the apple juice, vinegar, honey, mustard, salt, cumin, paprika, garlic powder, pepper, onion powder, cinnamon, and cayenne in a large container.
- Add the pork chops, cover, and refrigerate for 2 hours.
- Heat a grill to 400 F, remove the chops from the brine, and pat them dry.
- Grill the chops for 4 to 6 minutes per side until they reach 145 F in the center.
- Transfer the chops to a plate and rest them for 5 minutes before serving.
