Ingredients
- 4 lb sweet potatoes
- 4 tsp salt
- 1 tbsp garlic powder
- 1/3 cup unsalted butter
- 1/4 cup sour cream
- 2 cloves garlic
- 1/4 cup parmesan cheese (optional)
- 1/4 cup milk
- 1 tbsp fresh parsley (optional)
Steps
- Peel 4 pounds of sweet potatoes, cut them into 1-inch pieces, and place them in a large pot.
- Cover the potatoes with water, add 3 teaspoons of salt, and boil for 15 minutes until tender.
- Melt the butter in a small skillet, add the garlic, and cook for 2 minutes.
- Drain the potatoes, return them to the pot, and mash them with the garlic butter, sour cream, milk, garlic powder, and Parmesan.
- Season with the remaining salt and stir in the parsley.
