Ingredients
- cooking spray
- 6 oz 60% ghirardelli chocolate
- 1/4 cup pumpkin puree
- 1 1/2 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1 whole egg
- 3 egg whites
- 1/8 tsp kosher salt
Steps
- Heat the oven to 350 F and coat an 8-inch round cake pan with cooking spray.
- Melt the chocolate in a heatproof bowl over a saucepan of gently simmering water, then cool it for 5 minutes.
- Whisk the pumpkin, maple syrup, vanilla, and whole egg into the melted chocolate.
- Beat the egg whites with the salt until firm peaks form, then gently fold them into the chocolate mixture.
- Pour the batter into the pan and bake for 25 to 30 minutes, until the center is set and reaches 160 F.
- Cool the cake in the pan for 10 minutes before cutting.
