Ingredients

8 oz fusili pasta
1 cup thick and chunky salsa
1 cup sour cream
1 tbsp taco seasoning
1 can (15 oz) whole kernel corn
1 can (15 oz) black beans
2 cups cooked and shredded chicken
2 cups shredded monterey jack and cheddar cheese
cilantro or sliced green onions for garnish (optional)

Steps

Heat the oven to 375 F and grease a 9-by-13-inch baking dish with cooking oil.
Boil the fusilli in salted water until tender, then drain it.
Stir the pasta, salsa, sour cream, taco seasoning, drained corn, drained beans, and chicken together in a large bowl.
Spread the mixture in the baking dish and cover it with the shredded cheese.
Bake for 20 minutes, until the casserole is hot and the cheese is melted.
Check that the thickest part of the poultry reaches 165 F before serving.
Top with cilantro or green onions, if using, and serve hot.
